Job Summary
Job Description:
Under the direction of the General Manager, this individual will be responsible for effectively supporting all culinary operations including the oversight of all production, operation, and sanitation aspects of culinary and stewarding operations throughout the facility. Specific responsibilities include but are not limited to:
- People and product focused hands on leadership of day to day operations of food outlet kitchens as assigned.
- Partners with the General Manager on the enforcement of all departmental and organizational policies and procedures. Assures staff compliance with all standards, policies and procedures.
- Supervision of culinary staff through planning and scheduling of work assignments and performance development. Provides input on the corrective counseling process, training and development, appraisals, payroll accountability.
- Plan and implement innovative menus, maintaining financial responsibility for the menu mix. Analyze menu and food costs and the preparation of cost and quality efficient menus/specials.
